Spent most of my life in the Village of Waterford, a small town just outside of the Milwaukee suburbs. After 12 years in North Hollywood, Bel Air and Culver City, Cali, I moved back to Wisconsin in September 2009. No regrets - of moving to LA OR moving back to WI. Have traveled to Belfast, Ireland, Dayton (OH), Manhattan, Seattle, Cedar Rapids, New York, Miami and Sydney, Australia with my plays. Moved back into the Village of Greendale where I was born. Fresh Walleye: Food of the Gods

Ircink's Fried Walleye

4 walleye fillets (or as many as you wanna make; 4 isn't really enough)
5 eggs
1 1/2 packs of Ritz Crackers
vegetable oil
seasoning salt
6 red potatoes

1.) Cut up potatoes. Fry over medium heat with oil and a little wine.
2.) Relax. Make yourself a Brandy Old-Fashioned sweet, have a
cigarette and listen to Gordon Lightfoot’s "Ponyman".
3.) Beat eggs.
4.) Crunch crackers until fine.
5.) Cook oil in large skillet over medium heat.
6.) Take another break while oil gets hot.
7.) Dip fillets in egg, then in breading.
8.) Place fish in pan and fry until golden brown and flaky in center.
9.) Grab another drink and enjoy the best fish you’ll ever eat.

I have NEVER had a disappointed dinner guest. Matter of fact, most beg for more.
